Like I said above, I don't know the name of the first episode by airdate but it's the one with the salt creature M-113 (I think), but it's got a really random title..

Oh god - I don't know the original episode number but it was the first pilot of TOS I think "The Cage"..

You forgot the 19th century clipper frigate, the constitution-refit, the alternative future Enterprise-J, the US Navy WWII and nuclear aircraft carriers, and a number of pre-Federation vessels from Enterprise that I can only vaguely recall :p

But great list - forgot about the NASA shuttle!

It's not Lieutenant Leslie is it? Not sure if he'd be described as a "jack of all trades" but he did seem to work in every bloody department on Kirk's Enterprise..
