If you are going for "realism" and decide to go with Vulcans to replace the Cardassians i would suggest the Andorians to replace the Ferengi as they are rivals of the Vulcans throughout most of ENT. BUT... My personal preference would be to see the Suliban and the Xindi replace the Ferengi...
