I am not a fan of the Turn and Summary buttons being so close together. I, too, and probably all of us have hit Turn by accident. Well in the original 800x600 game, there was only space for 12. At higher resolutions, there's no reason the game couldn't be modified to support more save slots. I'm working on the build queue now. Basically, it's GUI-limited (i.e. not any limitation in the Save game code). If only they had added a scrollbar to to the list of save files...

There may not be a button for it. Just click on the byte you want to edit, and start typing in the new value (1E). If it asks you to insert or overwrite, choose the overwrite option.
