I say "Scotty" (James Doohan), but I am not sure. If I remember correctly he was missing a finger on one had. That's why I infer it was his hand they doubled.

Correct. James Doohan was missing his middle finger on one hand. It was shot off by friendly fire. A fellow solider in the Royal Canadian Artillery shot him six times, four in his leg, one in the chest, and one through his right middle finger. Because of that he always had to hide his hand from the camera, and they used a hand double for a few close up hand scenes. There are a few shots from the show where you can notice his missing finger...
